CHILEAN SEABASS Easy Recipe

Friday's a good day to have fish. Chilean seabass is what I used for this recipe because the sauce helps tone down the fattiness of the fish.  Its mild flavor and soft chunky texture blends well with this sauce.

This recipe is for 2 people and the ingredients needed are pictured above.
 INGREDIENTS:
3/4 lb of chilean seabass
1 TB of sugar
1/2 onion sliced
1 small red bell pepper seeded and sliced
1/3 c of tomato sauce
1/4 c of grapeseed oil
salt and pepper to taste

Combine onions with sliced pepper and sugar

Combine tomato sauce and oil mixture

Place fish on baking dish. Season with salt and pepper.  Top with vegetable mixture and pour sauce over.
Bake in 350 degrees oven for 30 minutes.
Serve with Micro Sorrel on top as garnish.
I served this with angel hair pasta and steamed or quickly boiled broccoli on the side.
A healthy choice after all those comfort foods!

GREEN TEA AND MATCHA TEA

Every morning I drink green tea mixed with matcha tea.

What are the health benefits of matcha?
Matcha is renowned for numerous health benefits.  It is rich in nutrients, antioxidants, fiber and chlorophyll.  The health benefits of matcha exceed those of other green teas. You can read more about matcha and its health benefits if you look it up.

I first learned the benefits of matcha tea through a tea ceremony when I went to visit Japan.  Since then, I've switched to drinking my tea with matcha to increase the anti-oxidant in my green tea.

In tea ceremony, it is served in its pure form and frothed up with a wooden wisk.  It is usually served accompanied with sweets to ease up the slightly bitter flavor.  In my case, I've discovered how to drink matcha tea without having to eat sweets; but by diluting my green tea with matcha instead.

Matcha is tea leaves that has been specially treated (covered with bamboo mats) to increase the chlorophyll content; destemmed, deveined and ground. And therefore, you are actually drinking the leaves and the stems as opposed to extracting some of its properties in green tea.

 To make a pot of green tea with matcha, simply measure about a teaspoon of lose green tea into the strainer, and about 1/3 tsp of matcha tea.  Pour hot water (not boiling) and steep for about 10 minutes before using.  The pot on the right holds about 12oz.

You can pour more water into the pot for up to 3 more times without adding more tea or matcha.  And if you don't like strong tea anyway, you can keep pouring more hot water as the day goes.

BROILED OR GRILLED FISH PHILIPPINES STYLE

Milk fish is usually used to grill in this method.  But for a change, I used Orata to make this simple dish healthy and delicious dish.

Mince about an inch piece of peeled ginger and mix it with finely chopped onions and tomatoes.  Season with fleur de sel or sea salt and pepper.  Stuff the belly of the cleaned whole fish that's been slit on top and bottom for broiling with the ginger, onion, tomato mixture.  Secure the stuffing with a fine trussing nail or may tie it with kitchen thread to truss the fish.  Season with salt and pepper and brush it well with oil (olive, canola or safflower).  Place in a broiling pan and cook for 6 minutes.  Turn fish over and broil for another 7 minutes.  Serve immediately.


Do not overcook fish.  Remember, an undercooked fish is easier to fix than an overcook fish.
