BROILED OR GRILLED FISH PHILIPPINES STYLE

Milk fish is usually used to grill in this method.  But for a change, I used Orata to make this simple dish healthy and delicious dish.

Mince about an inch piece of peeled ginger and mix it with finely chopped onions and tomatoes.  Season with fleur de sel or sea salt and pepper.  Stuff the belly of the cleaned whole fish that's been slit on top and bottom for broiling with the ginger, onion, tomato mixture.  Secure the stuffing with a fine trussing nail or may tie it with kitchen thread to truss the fish.  Season with salt and pepper and brush it well with oil (olive, canola or safflower).  Place in a broiling pan and cook for 6 minutes.  Turn fish over and broil for another 7 minutes.  Serve immediately.


Do not overcook fish.  Remember, an undercooked fish is easier to fix than an overcook fish.
