FRENCH TOAST-STUFFED WITH BLUEBERRIES AND RASPBERRIES


GOOD MORNING Pretty World!  I have a week-old brioche loaf that need to be saved.  Perfect scenario for French Toast!

Ingredients necessary:
2 Eggs
1/3 c half and half (or half cream and half milk or just whole milk - and for healthier substitute 2% milk)
2 TB of sugar
1 tsp vanilla
Nutmeg
salt
Stale old bread (brioche or challah or egg bread - could be fresh bread as well)
1-1/2 cups raspberries
1-1/2 cups blueberries
butter for frying

FIRST STEP is to slice your bread about an inch thick.  Then combine the first 3 ingredients and beat together well.  Add the sugar, vanilla, nutmeg and salt to season and beat in well.


Slit the bread in the center to create a pocket.  Stuff with the fruits in the center.  Dip in the bowl of egg mixture to absorb the mixture well on both sides and inside. Fry in buttered skillet.

Serve with additional fresh raspberries and blueberries, warmed syrup and green tea with matcha or individual drip coffee.

Makes for 2 or 4 half servings.
